What does this converter do?

Out of butter mid-recipe — or swapping it out on purpose? Enter an amount of butter and get the matching amount of oil (or the reverse) in cups, tablespoons, teaspoons, fluid ounces and milliliters.

The ratio

Butter is only about 80% fat; the rest is water and milk solids. Oil is 100% fat, so you need less of it:

oil = butter × ¾        (liquid oils: vegetable, canola, olive)
butter = oil ÷ ¾ = oil × 1⅓

So 1 cup of butter becomes ¾ cup of oil, and 1 stick (½ cup) becomes 6 tablespoons. Melted coconut oil is a solid fat like butter and swaps 1:1.

  1. Choose the direction — Butter → Oil or Oil → Butter.
  2. Enter the amount and pick its unit (sticks of butter are supported).
  3. Pick the type of oil. Read the substitute amount in every unit at once.

Tips for baking

  • Oil works best in cakes, muffins, brownies and quick breads, where it gives a moist, tender crumb.
  • Skip it where butter's structure matters — shortbread, pie crust, laminated dough, and cookies that should hold their shape or turn crisp.
  • Butter adds flavor and browns; if the recipe relies on that, expect a milder result.

Can I use oil for butter in cookies?
