What does this tool do?

If a recipe calls for one kind of yeast and you have another, this calculator gives you the equivalent amount. Enter the amount from the recipe in grams, ounces, teaspoons, packets, small cakes or cubes. You'll see the equivalent of fresh (cake/compressed), active dry and instant yeast side by side, each in every unit, so you can measure with a scale or a spoon.

The conversion ratio

The calculator uses the common baker's ratio:

  • Fresh → active dry: use half the weight.
  • Fresh → instant: use 40% of the weight.
  • Active dry → instant: use about 80% (roughly 20% less).
  • Instant → active dry: use 1.25× the weight.

Fresh yeast is about 70% water, which is why you need so much more of it by weight. Instant yeast is milled finer and has fewer dead cells than active dry, so a little less does the same job. Brands and bakers quote slightly different ratios. Treat these results as a solid starting point and judge by the dough, not the clock.

Unit sizes used

  • Packet / envelope of dry yeast: ¼ oz ≈ 7 g ≈ 2¼ tsp
  • Teaspoon of dry yeast: ≈ 3.1 g
  • Small fresh-yeast cake (US): 0.6 oz ≈ 17 g
  • Fresh-yeast cube (Europe): 42 g

Fresh yeast is crumbled rather than spooned, so the table shows no teaspoon value for it.

FAQ

Do I need to change the method when I swap yeast types?

Sometimes. Active dry yeast is traditionally proofed in warm water (about 40 °C / 105 °F) before mixing. Instant yeast can go straight into the flour. Fresh yeast is crumbled into the dough or dissolved in lukewarm liquid. When you switch from active dry to instant, you can skip the proofing step and the first rise may be a little faster.

Is rapid-rise or bread-machine yeast the same as instant?

Yes. They're instant yeast under different names, so use the Instant row for any of them.
