  1. Why do volume-to-weight conversions need to be ingredient-specific?

    Different ingredients have different densities. One cup of all-purpose flour weighs about 120 grams, while one cup of granulated sugar weighs about 200 grams, and one cup of honey weighs about 340 grams. Using a generic conversion would give wildly inaccurate results.
